•Sauté the Base: In a medium saucepan, combine the butter, chopped apples, light brown sugar, cinnamon, and salt. Cook over medium heat, stirring occasionally, until the apples become tender and release their aromatic juices.
•Thicken the Syrup: Whisk in the cornstarch and continue to simmer until the liquid thickens into a rich, glossy glaze that coats the back of a spoon.
•Cool and Chill: Remove the saucepan from the heat and allow the filling to cool entirely to room temperature before transferring it to an airtight container to chill in the refrigerator.
•Prepare the egg wash: In a small bowl, whisk one egg with a pinch of salt until well combined.
•Prepare the cinnamon sugar: In a separate bowl, mix the coarse sugar crystals with cinnamon and set aside.
•Shape the turnovers: Cut the puff pastry into 10 × 10 cm squares and gently roll each square to make it slightly thinner. Brush the four edges with egg wash, then place a spoonful of the chilled spiced apple filling in the centre.
•Fold and seal: Fold each square diagonally to form a triangle. Press the edges together firmly, then crimp with a fork to seal the filling inside.
•Add the finishing touches: Make three small slits on top of each turnover to allow steam to escape. Brush the tops with egg wash and generously sprinkle with the cinnamon sugar mixture.
•Preheat and bake: Preheat the oven to 400°F (200°C). Arrange the turnovers on a lined baking tray and bake for 20–30 minutes, or until puffed up and beautifully golden. Baking time may vary, so follow the instructions on your puff pastry packaging if needed.
•Prepare the lemon icing: While the turnovers bake, combine the icing sugar, melted butter, lemon juice, milk and a pinch of salt in a bowl. Mix until smooth and lump-free. Add a little more milk if needed to achieve a drizzling consistency.
•Drizzle and serve: Allow the apple turnovers to cool slightly after baking, then drizzle the lemon icing over the top. Serve and enjoy these flaky, buttery pastries filled with warm cinnamon-spiced apples!
