Instructions

IngredientsChef's Tips
Recipe Progress

•In a large mixing bowl, add the cubed butter and whisk until slightly creamy. Add the white sugar and light brown sugar, then whisk together until well combined and fluffy.

•Add the egg, vanilla extract, and Mashed banana. Whisk until fully incorporated.

•Add baking powder, baking soda, and salt. Gently mix and then add the flour and mix until just combine. Add chocolate chunks or chocolate chips and mix everything together. DO NOT OVERMIX.

•Portion the dough into 95g each and add a piece of chocolate chunk inside it and roll it into a rough cookie dough ball. Place the cookie dough balls onto a tray and freeze for at atleast 1 hour or overnight.

•Preheat (fan) oven to 175C (350°F). Bake for 13-15 minutes or until the tops are lightly golden while the centre remain soft.

•Remove from the oven and top it up with more chocolate chips, banana pieces and sprinkle some cinnamon power (optional). Let it cool for at least 30 minutes.

•Serve with ice cream🤤

Notes

Measure in grams: For the most accurate and consistent results, follow the measurements in grams rather than cups.

Chef's Tips

  • If the dough feels too sticky, chill it in the fridge for a while to firm up. Then roll into balls easily or just use a cookie scoop for quick, even portions.
  • Freezing is important
  • Store any extra dough balls in an airtight container or freezer bag and freeze for later. Whenever a cookie craving hits, bake straight from frozen🫶🏻
